Because it's way too easy to manipulate search engine results by listing a load of keywords that aren't actually super relevant to your content. Search engines have adapted and created more advanced algorithms to avoid that.
You're also letting your competitors know what all of your target keywords are. You're listening to all of the wrong SEO advice if you think the meta keywords matter at all.
